The size of the espadin maguey is 1.5m wide and 1m high on average. It is the most used in Oaxaca for the production of mezcal, it is the maguey with the greatest geographical presence in Mexico, whose morphological plasticity caused the description of more than 20 species, the maturation time varies between 7 and 10 years.
